I love finding new places to eat at! Its like an adventure for food lovers.........hint, hint, that's me!


I don't know about you, but using Yelp has been apart of this process! San Diego alone is huge on food, but I love going to places in Little Italy 


My most recent find happened to fall on date night and let me tell you I wasn't disappointed at all! The restaurant is called, Bencotto, and I can best describe it as Modern Italian. They had a great selection of share plates, appetizers, and great cocktail menu. We decided to have :


1. Parmesan Cheese Sampler (24 months and 40 months aged)

2. Fried Zucchini Blossoms

3. Bencotto Salad- Served with Spring Greens, Beets, Green Beans, Goat Cheese, and House Dressing

4. Spinach Ravoli w/ Sun Dried Tomato Sauce

5. Pomegranate Cosmo

Weekly Lunch Prep

Traditional Salad

Salad can be boring, but I think we don't realize how versatile it can actually! We can play with colors, textures, and flavors. For a more traditional filled salad I like to include-

Romaine Lettuce

Tomato

Cucumber

Avocado

Shredded Carrot

2 Hard Boiled Eggs

Light Honey Mustard Dressing

Couscous Salad

Can never go wrong with a hearty dish like this Couscous Salad. It's fresh, filling, and delicious! I like to prep it on a Sunday and put it containers to bring to work with me during the week. It includes the following-

Couscous

Zucchini

Arugula

Parsley

Goat Cheese

White Wine Vinegar, Lemon Juice, and some Salt and Pepper as the dressing

Spinach and Strawberry Salad

My second choice for salad mixes would be with a few sweeter ingredients and stray from the more tradition adds for a salad. I normally have a lot of ingredients left so I prep the salad in containers and just pour the dressing in a different container the day of.  I like to put together the following ingredients-

Spinach

Strawberries

Pecans

Feta Cheese

Poppy Seed Dressing


My Snacks

Almonds

Being a vegetarian, I always knew I had to find things that will provide protein, healthy fats, and help sustain my energy when I danced and when I teach. I love nuts and seeds, but my favorite kind of nut are the almonds and I will always put 1/4 cup in a bag to have as a snack. 

Banana

B-A-N-A-N-A-S! I love bananas, but of course prefer them in a banana spilt! Though, in this case, just a banana a day works, too! Bananas are so easy to travel with while they provide potassium and prevent cramping in your muscles. 

Cliff Bars

There are so many types of granola/protein bars out there, but I always buy Cliff Energy Bars. I love all their different flavors while they have about 10 grams of protein and low in fat! They are easy to travel with and have just enough sweetness to get through a long day of dancing! 

Chocolate

Yes, you read that correctly! I said, CHOCOLATE! I have a major sweet tooth. I think it's important not to deprive yourself because then your body will just crave it more and more. I normally like to keep two Hershey Kisses or two Reeses Mini PB cups just for a little pick me up throughout the day. Sometimes, our blood sugar goes down so with a little sweetness does the trick! 

String Cheese

I love, love, love cheese! It's one of my favorite snacks by far whether I was at rehearsals, teaching, or even when I'm just home. I always buy Sargento Sharp White Cheddar String Cheese! I love that it's under 100 calories while provide a little source of protein and healthy fat.
